1/2 cup butter, softened
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1 tsp vanilla extract
1 large egg
1 cup and 1 tbsp AP flour
1/4 tsp baking soda
1/2 tsp salt
Whisk dry ingredients and add to creamed sugar slowly until just combined. Mix in oats, then cornflakes thoroughly. Drop 1.5 tbsp balls of dough on baking sheet lined with parchment and bake 350°F for 14 minutes. Cool on rack.
