Basil Eggplant
First saute eggplant in hot, hot oil, adding onions and later garlic until browned. Moisten with a little bit of chicken stock and cook until liquid is almost gone. Mix together oyster sauce, fish sauce and cornstarch, and toss quickly until thickened.
