Tonkotsu Yamada Ramen - Thin, wavy noodles with some resilience. The broth is flavorful without being overly salty - doesn't pack a huge punch on the first sip but is gentle enough to be enjoyable from start to finish. All the toppings were yummy (I do prefer my egg a bit more soft) but the Kakuni was my favorite (jello-y, unctuous).
