Churro Waffle with Nutella Sauce

Churro Waffle Roux Dough
1 cup water
1/2 teaspoon salt
1 1/2 tablespoons sugar
2 tablespoons vegetable oil
1 cup flour
1 egg

Bring water, salt, sugar and oil to a low boil. Remove from heat and whisk in flour. Mix until the dough forms a ball. Cool slightly and stir in egg thoroughly. Waffle

Churro Waffle Topping
butter
3/4 cups sugar
2 teaspoons cinnamon

Brush butter over warm waffles and dip in cinnamon sugar.

Overnight Waffles
0.5 cup warm water
1 tbsp active-dry yeast
1.25 cups milk, lukewarm
6 tbsp butter, melted
2.5 cups flour
1 tsp sugar
3/4 teaspoon salt
1/2 tsp baking soda*
2 large eggs, whipped to stiff 2" peaks*

Add liquid ingredients (*except egg) in steady stream to dry ingredients (*except baking soda) slowly. Fold at the end, rather than overmixing. Next day, mix in baking soda and fold egg into batter. Waffle.

Quick Waffles
0.5 cup warm water
1 tbsp active-dry yeast
1.5 cups milk, lukewarm
6 tbsp butter, melted
2.5 cups flour
1 tsp baking soda
1 tsp sugar
3/4 teaspoon salt
2 large eggs, whipped to stiff 2" peaks* right before using.

Add liquid ingredients (*except egg) in steady stream to dry ingredients slowly. Rest for 30 minutes. Fold in egg. Waffle.
