This recipe is truly superb. From now on, my go-to recipe for those pesky potlucks.
2-3 skinless boneless chicken breasts
1 cup water
3 tbsp fish sauce
2 tsp sriracha sauce or more to taste
Poach chicken and cool. Soup is good for Tom Yum or similar.
1/2 head napa cabbage sliced into strips
2 large or 3 small mangoes sliced in strips
6 tbsp coconut cream (not milk)
handful of cashews (roasted)
big handful of cilantro (finely chopped)
juice of two or three limes
2 green onions, sliced
Shred the chicken and toss.
